Pancakes aren’t just for Shrove Tuesday, but it’s a damn good excuse to whip out the pan. If your pancakes are a little hit and miss, or you fancy challenging your tastebuds this year, make sure they aren’t a flop and use this flipping delicious pancake recipe.

Ready for the recipe?… Yep, thought so. Here’s what you’ll need:
APPLE PIE PROTEIN PANCAKES RECIPE
1 cup oat flour (90g)
1/2 cup apple puree
1/2 cup egg whites (120g)
2 tbsp flax meal (25g)
1 headed tsp apple pie spice
4 tsp baking powder
1-2 scoops protein powder (30g)
Apple Pie Compote (topping):
1 small apple, peeled and chopped
1 tsp apple pie spice
And now for the method to this (pancake) madness…
Blend all pancake ingredients in a food processor or blender until smooth and combined.
Heat a nonstick pan to medium-high heat. Add 2 tablespoons of batter to create one pancake. When the edges start to look dry (2-3mins), flip and cook another 1-2 minutes on the other side.
Stovetop or microwave, poach the apple in a layer of water and apple pie spice until soft and tender. Sprinkle with extra cinnamon and top your pancakes with them.
Add a scoop of vanilla protein ice cream and dig in! (optional)
